One of my favorite things when we were camping this summer was preparing meals outdoors with friends.
At our last campsite of the summer, in the Adirondacks, my friends Lisa and Isabel made a wonderfully simple and delicious salad for lunch. They also showed me how they made their 1-2-3 Dressing. So easy, so tasty.
I want to share this recipe with you now because the farmer’s markets are brimming with tomatoes and cucumbers, now’s the time to put this recipe to use!
This recipe was originally Lisa’s, but now Isabel makes it on her own – with a personal twist – so I’m calling it Isabel’s Tomato-Cucumber Salad.
Kids are that much more likely to eat healthy food if they’ve put it on the table themselves, that’s why it’s such a good idea to encourage kids to make healthy recipes “their own.”
We used Goat Feta because goat milk is easier for my family to digest.
To make this salad non-dairy and “raw,” substitute the feta with raw pine nuts!
Dice the Tomatoes and Cucumbers, sprinkle in the Feta and dress.
Mix it all up, add salt and pepper. Dress your salad.
This recipe makes a lot, you can easily adjust the amounts of the recipe by using the 1-2-3 ratios. 1 part mustard, 2 parts natural sweetener, 3 parts balsamic and enough oil to make it all perfect for your palate.
