Raw Almond Citrus Candy

Mmmm, I created this recipe with what was on hand when my family wanted a sweet treat. My kids loved them too and according to my daughter they are even better cold, out of the freezer.

They are a lovely treat to give as a gift. (Think Valentine’s day, hostess gift, easter/passover, etc…)

Ingredients:

  • 1/4 cup organic raw almond butter
  • 3 pitted organic medjool dates
  • 2 large pieces of organic dried mango
  • 1 teaspoon of grated fresh ginger
  • 1/2 teaspoon organic lemon rind
  • 1/2 teaspoon organic orange rind

Blend all ingredients in a food processor, until it becomes a paste.

It will hold together when you form it into balls.

Store them in the freezer.

This is a great sweet treat because the fat and protein in the almonds slow down the absorption of sugars (from the mango and dates) into your blood stream. This prevents this sweet from giving you the high-then-crash experience that many high-sugar sweets will give you. The almonds serve to reduce the glycemic index in this recipe.
